
Samosa
Samosa is enjoyed all over India as a snack. It is a perfect snack for anytime of the day. Samosa is a crispy shell filled with variety of stuffings, the most popular one is potato/ aloo stuffing. Read more on how to cook aloo samosa very easily.

Ingredients:
- 250 gms maida/flour
- Pinch of ajwain
- Pinch kalonji(optional)
- Salt to taste
- ½ cup Ghee/oil
- 1 cup water
- 3 potatoes
- 100 gms peas
- 1 tsp chili powder
- 1 tsp jeera
- 1 tsp garam masala
- 1 tsp jeera powder
- 1 tsp dania powder
- ¼ turmeric powder
Method for outer shell:
- Combine maida/flour, kalonji(optional), ajwain and salt.
- Add ghee/oil into the mixture and mix it into a crumbly texture.
- then add water in parts to form a very tight and hard dough (it’s important to keep the dough tight and hard).
- Keep this aside for 10-15 mins.
- Roll the dough into a log and cut into 4 parts.
- Form each part into circular sheets, and cut this into half, forming semi-circles.

Method for filling:
- Boil and mash the potatoes and peas.
- Add 3-4 tbsp into a pan on low flame and add jeera,wait for the jeera to start crackling.
- Now add the mashed potatoes and peas into the pan and stir for a while.
- Add chili powder, salt, dania powder, jeera powder, garam masala and turmeric powder and stir everything together and saute for a while.

Assembling:
- Smear water along the horizontal edges of the sheet. Form a cone from the dough and press the edges together.
- Add the filling in the cone, fold one of the top edges down onto the filling, smear water on the other edge and fold it on top of the other edge and seal it tight.
- Deep fry till golden brown.
- Serve hot with ketchup or green chutney.
