
Khara Bun / Masala Bun is famous in bakeries specially in Iyengar bakeries. These buns are nostalgia, I remember having these during my school days. You can also enjoy these buns at home, a very simple recipe.

Ingredients:
- 300 gm All purpose flour/ Maida
- 1 1/2 cup milk (1/2 cup milk for yeast)
- 1/2 tsp active dry yeast
- 1/2 tsp sugar
- Salt to taste
- 1 tsp chili powder
- 1/4 tsp turmeric powder
- 1 tsp red chili flakes
- 1 tsp jeera/cumin
- 1 small onion
- 2 green chilies
- handful curry leaves
- handful coriander
- 50 gm butter

Method:
- In a cup add 1/2 cup milk, 1/2 tsp sugar and 1/2 tsp yeast, stir this mixture and keep it aside for 5 min the yeast to activate.
- For 300 gm flour/maida add salt to taste, 1 tsp chili powder, 1 tsp jeera/cumin, 1 tsp red chili flakes, 1/4 tsp turmeric, 1 finely chopped onion, 2 finely chopped green chilies, finely chopped turmeric leaves and coriander and butter.
- Mix all the dry ingredients thoroughly, then add the yeast mixture and mix well. Add milk in parts and knead till it forms a soft dough, knead for at least 5 min and allow it to raise for at least 1 hr in a warm place.
- After it’s raised, knead the dough again and partition the dough into desired portions and form balls.
- Grease the tray with butter place the balls on them giving some space between each of them at least a cm gap. Cover it, place it in a warm environment and allow it to raise for an hour.
- After an hour, brush the balls with milk/butter. Preheat the oven at 180 c for 15 min and bake the buns at 180 c for 20-25 min.
