Bakery Style Egg Puff

Who doesn’t love a good Egg Puff. Bengaluru bakeries during break hours are seen filled with people ordering one Egg Puff and a cup of nice hot Tea.
You can enjoy this at home too, it is a tedious process but trust me it is worth it at the end. Let’s see how to make Egg Puff at home.

Ingredients:

  • 500 gm Maida/All purpose flour
  • 300 ml Water
  • 500 gm Unsalted Butter
  • Salt to taste
  • 1 large Onion
  • 1 tsp Chili powder
  • 1 tsp Garam Masala
  • 4 Hard Boiled Eggs

Method for Puff Pastry (Serves 8):

  1. Add salt and 30 gm butter into flour and mix well.
  2. Add water in parts and knead the dough into a soft texture.
  3. Place the kneaded dough in refrigerator and it allow it cool for 10-15 min.
  4. Take 500 gm butter and shape it into a rectangular block thickness of 1 inch approx.
  5. Roll the dough into a rectangular sheet of 1.5 cm thickness and place the butter block in the center.
  6. Wrap the butter block with the dough sheet tightly using all the edges of the sheet.
  7. Roll this again into a thick sheet and allow it to cool in refrigerator for 10 min.
  8. Roll the dough again into rectangle sheet and fold in halves to form layers, and roll again, allow it to cool in refrigerator for 10 min.
  9. Repeat the above step for 5-10 times to form many layers.
    • Alternate method: You can roll the dough into thin sheet, apply butter then fold, roll apply butter, fold and roll till you make many layers.
  10. After forming many layers, roll the dough into thin sheet and partition it into rectangular sheets of 10 cm X 15 cm approx.
  11. You can store the extra sheets in refrigerator for a week.

Method for Egg Puff (For 4 servings):

  1. In a pan heat a tbsp of oil on medium heat, add diced onions and saute till they turn translucent.
  2. Add a tsp of chili powder, garam masala and salt to taste and fry for 10 mins.
  3. Take the cut sheets of puff pastry add a tbsp of fried onions on half side of the sheet, place half of the boiled egg yolk side down on the fried onions and fold the sheet over the egg and close it.
  4. Place this in the preheated oven and bake it at 200 c for 15-20 mins on a middle rack.
  5. Serve it hot with ketchup or enjoy it as is.
