Khaman Dhokla is a dish from Gujarat and surrounding states. It is very soft and fluffy. It can be had as main course or side dish or as a snack, and it is very easy to make read more to know.

Ingredients:
- 200 gms besan powder
- Salt to taste
- 1/2 tsp turmeric
- 8 gms Eno
- 1 tsp sugar
For seasoning:
- 1 tsp mustard seeds
- 1/2 tsp asafoetida/hing
- Few curry leaves
- 2 chopped chilies
- Salt to taste
- 2 tbsp oil
- 1 tsp sugar
- 1/2 lemon
- Finely chopped coriander
- 150 ml water
- Grated coconut
Method:
- Mix besan, salt, turmeric powder and sugar in a bowl, then add water in small quantities till it becomes a smooth batter like consistency. Leave it for 5-10 mins.
- When you are about to cook it, add eno into the mixture and mix well.
- Transfer the batter into a flat vessel and steam it for 15 mins
- For seasoning, heat oil in a pan and add mustard seeds, when it starts crackling add asafoetida/hing, salt, curry leaves and chillies, saute it for a while then add water into the mixture, sugar and 1/2 lemon juice, allow it to boil for 5-10 mins.
- Remove the cooked dhokla onto a plate, cut it into squares and pour the seasoning on it and allow it soak for a while.
- Sprinkle some fresh grated coconut, coriander leaves and serve it with green chutney.
