Kajur Barfi

Kajur Barfi is a very healthy sweet packed with loads of nuts, it can be made during Diwali or holi or any festival, this sweet doesn’t have any sugar in it which makes it a very healthy sweet.

Ingredients:

  • 500 gms Dates(seedless)
  • 100 gms Pista
  • 100 gms Cashew nuts
  • 100 gms Almonds
  • 4 tbsp ghee
  • Poppy seeds

Method:

  1. Chop pista, cashew nuts and almonds roughly, pour 2 tbsp ghee into a pan and roast them on a medium flame.
  2. Finely grind the dates and heat it on a pan with 2 tbsp of ghee, keep stirring the dates so that it does not stick to the pan.
  3. Once the dates become soft add the roasted dry fruits into the dates and mix it well.
  4. Remove the mixture from heat and allow it to cool for 2 mins so that you can handle the mixture.
  5. You can make ladoos, or you can cut it into square pieces, I made it into a roll and rolled it on some pistas and poppy seeds. Keep this roll in refrigerator and allow it to cool down completely so that it becomes hard, then you can cut it into discs.
